  • 1 cup Cottage cheese
  • 1 cup Gruyere cheese Shredded
  • ½ cup Monterey Jack cheese Shredded
  • ¼ cup Heavy cream

Method
 

  1. In this step, you're getting everything ready before you start mixing. It involves preheating the oven to the right temperature (300°F) and greasing the muffin tin to prevent the egg bites from sticking. You also need to prepare the water bath by filling a large roasting pan with about an inch of hot water. This setup is important to cook the egg bites evenly.
  2. In this step, you blend all the ingredients together. This involves adding the eggs, cottage cheese, Gruyere cheese, Monterey Jack cheese, heavy cream, salt, and pepper to a blender. You’ll blend on high for 60 seconds to ensure everything is well-mixed and silky smooth. After blending, it's recommended to strain the mixture through a fine-mesh sieve to get rid of any lumps and achieve the perfect creamy texture.
  3. Here, you pour the egg mixture into the muffin cups, filling each about ¾ full. This is the step where you add the ham, cheese, and other optional fillings like chives, peppers, or spinach. These ingredients will settle into the egg mixture while baking and create pockets of flavor inside the bites.
  4. In this step, you place the muffin tin into the water bath and bake the egg bites in the oven for 30-35 minutes. The water bath helps to cook the egg bites gently, ensuring they don’t dry out or become rubbery. You’ll know the egg bites are done when the centers are just set and barely jiggle when you shake the pan.
  5. After baking, you let the egg bites cool in the pan for about 5 minutes to allow them to firm up slightly. Once they've rested, you can release them from the muffin tin using a butter knife and serve or store them.
