Ingredients

  • 8–10 slices white sandwich bread crusts removed and soft texture ideal for layering
  • 2 tablespoons soft butter for lightly coating bread
  • 2 ¼ cups shredded Monterey Jack cheese freshly grated for smoother melt
  • 2 ¼ cups shredded cheddar cheese freshly grated for richer flavor
  • 14 ounces crumbled pork sausage fully cooked and drained for less grease
  • 1 4-ounce can diced green chiles adds mild heat and moisture
  • 7 large eggs provides structure for the custard
  • 2 ¼ cups milk whole milk preferred for creaminess
  • 1 ¼ teaspoons kosher salt enhances overall savoriness
  • ¾ teaspoon paprika adds gentle warmth
  • 1 ¼ teaspoons dried oregano adds earthy herbal notes
  • ¾ teaspoon black pepper for balanced seasoning
  • ¼ teaspoon garlic powder mild aromatic flavor
  • ¼ teaspoon dry mustard adds subtle tang

Equipment

  • 1 9×13 baking dish Used for assembling and baking the casserole
  • 1 Medium mixing bowl For whisking eggs, milk, and seasonings
  • 1 Whisk Used to blend the custard mixture smoothly
  • 1 Grater For shredding cheese freshly
  • 1 Skillet Used for browning sausage evenly

Method

  1. Trim the crusts from the bread and spread one side of each slice with a thin layer of butter.
  2. Arrange the bread, buttered side down, in the baking dish, cutting pieces as needed so the bottom is fully covered.
  3. Scatter the grated cheeses evenly over the bread, then top with the cooked sausage and green chiles.
  4. Whisk the eggs in a medium bowl, then blend in the milk and seasonings until smooth.
  5. Give the mixture one final quick whisk and pour it evenly over the casserole layers.
  6. Cover tightly and refrigerate overnight to allow the bread to absorb the mixture.
  7. Preheat the oven to 350℉ and bake uncovered for 50–60 minutes, until the center is set and the edges are browned; let rest 10 minutes before serving.
