Ingredients
  

  • 16-17 oz canned salmon or fresh leftover salmon drained and flaked Ensure boneless and skinless
  • 3 tablespoon olive oil divided For sautéing
  • 3 tablespoon unsalted butter divided For sautéing
  • 1 medium yellow onion finely diced About 1 cup
  • ½ red bell pepper diced Seeded and diced
  • ½ cup Panko breadcrumbs For binding the patties
  • 1 large egg lightly beaten Acts as a binder
  • 2 tablespoon mayonnaise For added creaminess
  • 1 teaspoon Worcestershire sauce Adds umami flavor
  • 1 teaspoon garlic salt Alternatively, use ½ teaspoon sea salt and ¼ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper For seasoning
  • ¼ cup parsley finely chopped For freshness

Method
 

  1. Heat 1 tablespoon olive oil and 1 tablespoon butter in a medium skillet over medium heat. Add diced onion and red bell pepper and sauté until golden and tender (7-9 minutes). Remove from heat.
  2. In a large mixing bowl, combine the flaked salmon, sautéed onions and peppers, breadcrumbs, beaten egg, mayonnaise, Worcestershire sauce, garlic salt, black pepper, and parsley. Stir until all ingredients are well incorporated.
  3. Shape the mixture into patties, about 2 inches wide and ⅓ to ½ inch thick, using about a heaping tablespoon of the mixture for each.
  4. Heat the remaining 1 tablespoon olive oil and 1 tablespoon butter in a non-stick pan over medium-high heat. Place the salmon patties in a single layer in the pan. Cook for 3-4 minutes per side, or until golden brown and cooked through. If they brown too quickly, reduce the heat.
  5. Transfer the cooked patties to a paper towel-lined plate to absorb excess oil. Repeat with the remaining oil, butter, and patties.
