  • 1 pound 90/10 ground beef Lean beef for a less greasy dip
  • 2 ¼ teaspoons chili powder Adds a mild heat and depth of flavor
  • 1 ½ teaspoons onion powder For a savory base flavor
  • 2 teaspoons garlic powder Provides a punch of garlic taste
  • 16 ½ ounces Velveeta cheese cubed Creamy and melts perfectly

Method
 

  1. Place the ground beef in a large skillet over medium-high heat. Brown the beef, breaking it up with a wooden spoon as it cooks, for 8–10 minutes.
  2. Sprinkle in the chili powder, onion powder, and garlic powder. Stir well to combine.
  3. Add the Velveeta cubes and the Rotel tomatoes to the skillet. Reduce heat to medium and cook, stirring occasionally, until the cheese has completely melted, about 5 minutes.
  4. Garnish with cilantro, green onions, and diced tomatoes, if desired. Serve immediately with tortilla chips for dipping.
