- Sprinkle in the chili powder, onion powder, and garlic powder. Stir well to combine.
- Add the Velveeta cubes and the Rotel tomatoes to the skillet. Reduce heat to medium and cook, stirring occasionally, until the cheese has completely melted, about 5 minutes.
- Garnish with cilantro, green onions, and diced tomatoes, if desired. Serve immediately with tortilla chips for dipping.
