Ingredients
  

  • 1and ⅞ cups 241g all-purpose flour measured by spooning and leveling
  • 1 teaspoon baking soda for leavening
  • 2 teaspoons ground cinnamon adds warm spice

  • ¼ teaspoon ground cloves adds depth
  • ¼ teaspoon ground ginger gives a subtle heat

  • 2 large eggs at room temperature (ensures proper mixing)
  • ½ cup 105g granulated sugar sweetens the bread
  • ¾ cup 158g packed light or dark brown sugar adds moisture and flavor
  • 1and ⅔ cups 376g pumpkin puree canned or fresh for a smooth texture
  • ½ cup 120ml vegetable oil for moisture can substitute canola or melted coconut oil
  • ¼ cup 60ml fresh orange juice adds brightness
  • ¾ cup 135g semi-sweet chocolate chips optional can use any type of chocolate chips or nuts

Method
 

  1. Preheat the oven to 350°F (177°C) and adjust the rack to the lower third position. Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, ginger, and salt.
  3. In a medium bowl, whisk the eggs, granulated sugar, and brown sugar until smooth. Mix in the pumpkin puree, oil, and orange juice.
  4. Add the wet ingredients into the dry ingredients and stir gently with a spatula or spoon until combined. There may be lumps, do not overmix.
  5. Pour the batter into the prepared loaf pan. Bake for 60–65 minutes, covering loosely with foil halfway through to prevent over-browning. Check with a toothpick in the center; it should come out clean with a few moist crumbs.
  6. Let the bread cool in the pan on a wire rack for at least 1 hour before removing and slicing.
