Method
 

  1. Pat the salmon fillets dry and season them by rubbing the spice mix all over the fillets.
  2. Heat the olive oil in a large skillet over medium-high heat. Cook the salmon fillets for 4 minutes on each side, then transfer them to a plate.
  3. In the same skillet, add the butter and diced onion. Sauté for 2-3 minutes or until the onion turns translucent and lightly golden. Add garlic and cook for 30 seconds, until fragrant.
  4. Pour in the heavy cream, chicken broth, sun-dried tomatoes, and parmesan cheese. Stir everything together and taste for seasoning, adjusting salt if necessary.
  5. Place the cooked salmon back into the skillet with the sauce and simmer for 2-3 minutes, or until the salmon is fully cooked.
  6. Remove from heat and garnish with fresh basil and a drizzle of lemon juice, if desired.
