- Pat the salmon fillets dry and season them by rubbing the spice mix all over the fillets.
- Heat the olive oil in a large skillet over medium-high heat. Cook the salmon fillets for 4 minutes on each side, then transfer them to a plate.
- In the same skillet, add the butter and diced onion. Sauté for 2-3 minutes or until the onion turns translucent and lightly golden. Add garlic and cook for 30 seconds, until fragrant.
- Pour in the heavy cream, chicken broth, sun-dried tomatoes, and parmesan cheese. Stir everything together and taste for seasoning, adjusting salt if necessary.
- Place the cooked salmon back into the skillet with the sauce and simmer for 2-3 minutes, or until the salmon is fully cooked.
- Remove from heat and garnish with fresh basil and a drizzle of lemon juice, if desired.
