Ingredients

  • 2 large eggs Room temperature for easier mixing
  • ½ cup panko breadcrumbs Light and crispy texture
  • 1 tablespoon garlic powder Adds savory depth
  • 1 tablespoon onion powder For a mild sweetness
  • ½ teaspoon kosher salt Helps enhance flavors
  • ½ teaspoon black pepper Adds subtle heat
  • 1.1 pounds lean ground beef Choose lean for less fat
  • 1.1 pounds ground pork Adds moisture and flavor
  • 22 ounces grape jelly For a rich sweet base
  • 13 ounces chili sauce For tangy contrast
  • Chopped parsley Optional for garnish

Method

  1. Preheat the oven to 425°F and line a large baking sheet with foil.
  2. In a large bowl, beat the eggs and then stir in the breadcrumbs, garlic powder, onion powder, salt, and pepper until fully combined.
  3. Add the ground beef and pork, mixing them until well combined. You can use your hands for this.
  4. Take 1 ½ tablespoons of the meat mixture and roll it into a ball. Place the meatballs on the prepared sheet, leaving space between them. Repeat until all the meatballs are formed.
  5. Bake the meatballs for 12-15 minutes or until golden brown.
  6. Transfer the cooked meatballs into a slow cooker, draining any excess fat.
  7. Add the grape jelly and chili sauce into the slow cooker. Stir everything to coat the meatballs, even if the jelly doesn’t completely dissolve.
  8. Cover and cook on high for 2-3 hours or low for 4-5 hours, stirring occasionally to prevent burning. Once the sauce has thickened, switch to the warm setting to keep them ready to serve.
  9. Optional: Garnish with freshly chopped parsley before serving.
