For the Sauce

Instructions
Preheat oven to 350°F (175°C)
Cut tops off peppers, remove seeds
Blanch peppers 3-5 minutes, drain
Brown beef with onions, add garlic
Mix in rice, tomatoes, sauce, seasonings
Prepare sauce mixture
Fill peppers with beef mixture
Bake covered 35 minutes
Add cheese, bake 10 minutes more
Garnish with parsley and serve
Notes
Choose firm peppers that can stand upright
Pre-cook rice for best results
