Ingredients

Instructions
Preheat oven to 325°F (165°C)
Gently whisk eggs until just combined
Add sugar and salt, whisk until incorporated
Gradually stir in milk and vanilla extract
Strain mixture through fine-mesh strainer
Pour into prepared baking dish(es)
Sprinkle nutmeg on top
Place in water bath
Bake 45-55 minutes (30-35 for individual cups)
Notes
Test doneness with knife inserted near center
Custard should be slightly jiggly in middle
Will continue to set while cooling
Best served within 2 days
