Ingredients
  

  • 4 boneless skinless chicken breasts sliced horizontally into thin cutlets
  • ¾ cup grated parmesan cheese finely grated divided
  • 3 large eggs beaten until smooth
  • cups panko breadcrumbs for extra crunch
  • cups Italian-style breadcrumbs well seasoned
  • teaspoons garlic powder evenly measured
  • 4 tablespoons oil neutral cooking oil for frying
  • 32 ounces marinara sauce your favorite jarred or homemade
  • cups shredded mozzarella cheese low-moisture melts best
  • Salt to season the chicken
  • Black pepper freshly ground for seasoning
  • Fresh basil leaves thinly sliced for garnish

Method
 

  1. Set the oven to 450°F so it’s fully hot when the dish goes in.
  2. Slice each chicken breast horizontally to create thinner cutlets, then pat them dry and season both sides with salt and pepper.
  3. Crack the eggs into one shallow bowl and whisk them, then mix the breadcrumbs, parmesan, and garlic powder in another shallow dish.
  4. Dip each piece of chicken into the egg, then press firmly into the breadcrumb mixture until fully coated.
  5. Heat the oil in a large skillet over medium-high heat and brown the chicken for about 2 minutes per side, just until golden on the outside.
  6. Spread a thin layer of marinara sauce across the bottom of a large baking dish and arrange the browned chicken on top.
  7. Spoon more sauce over each piece of chicken, then sprinkle with mozzarella and a little extra parmesan.
  8. Transfer the dish to the oven and bake until the cheese is melted and bubbly and the chicken is cooked through, about 12–18 minutes.
  9. Finish by scattering fresh basil over the top and serve hot, ideally with pasta or your favorite side.
