Ingredients
  

  • 3 Tablespoons cornstarch Divided into two portions
  • 1 pounds flank steak Thinly sliced into 1-inch pieces
  • cup low-sodium soy sauce Choose low-sodium for balanced flavor
  • 3 Tablespoons packed light brown sugar Adds sweetness and depth
  • 1 Tablespoons minced garlic For a fragrant punch
  • 2 teaspoons grated fresh ginger For a zesty aromatic flavor
  • 2 Tablespoons vegetable oil Divided for cooking beef and vegetables
  • 4 cups small broccoli florets Fresh crisp broccoli is best
  • cup sliced white onions For extra flavor and crunch

Method
 

  1. In a large bowl, whisk together 2 tablespoons of cornstarch with the water until smooth, then add the sliced beef and toss until every piece is lightly coated.
  2. In a small bowl, stir together the remaining cornstarch, soy sauce, brown sugar, garlic, and ginger until fully combined, then set the sauce aside.
  3. Heat a large skillet over medium heat, add 1 tablespoon of the oil, and once hot, add the beef and cook while stirring constantly until it is mostly cooked through, then transfer it to a plate.
  4. Add the remaining oil to the same pan, then add the broccoli and onion and cook, stirring occasionally, until the broccoli is bright green and just tender, about 4 minutes.
  5. Return the beef to the pan, pour in the prepared sauce, and bring everything to a boil, stirring for about 1 minute until the sauce thickens and coats everything.
  6. Remove from heat and serve hot over rice or noodles if desired.
